Here are the instructions to make Tandoori Chicken, a popular Indian appetizer:
Ingredients:
- 2 lbs chicken drumsticks and/or thighs
- 1/2 cup plain yogurt
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 tablespoon red chili powder
- 1 tablespoon coriander powder
- 1 tablespoon cumin powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- 2 tablespoons lemon juice
- 2 tablespoons oil
- Salt, to taste
- 1 tablespoon red food coloring (optional)
For the Garnish:
- Lemon wedges
- Chopped cilantro
Instructions:
- In a large mixing bowl, combine yogurt, ginger paste, garlic paste, red chili powder, coriander powder, cumin powder, turmeric powder, garam masala, lemon juice, oil, salt, and red food coloring (if using). Mix well to make a marinade.
- Add the chicken pieces to the marinade and mix well to coat the chicken evenly. Cover the bowl with plastic wrap and let the chicken marinate for at least 2 hours or overnight in the refrigerator.
- Preheat the oven to 450°F (230°C). Line a baking sheet with aluminum foil and place a wire rack on top.
- Arrange the marinated chicken pieces on the wire rack, leaving some space between each piece.
- Bake the chicken in the preheated oven for 25-30 minutes, turning the pieces over once midway through the cooking process.
- Check if the chicken is cooked by inserting a meat thermometer into the thickest part of the chicken. The internal temperature should read 165°F (74°C).
- Once the chicken is fully cooked, remove it from the oven and let it rest for 5-10 minutes.
- Serve the Tandoori Chicken hot, garnished with lemon wedges and chopped cilantro.
