Here are the instructions to make Rogan Josh, a popular Indian dish:


Ingredients:

  • 2 pounds of boneless lamb or beef, cut into cubes
  • 2 tablespoons vegetable oil
  • 2 large onions, finely chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1 cup plain yogurt
  • 2 cups water
  • Fresh cilantro, chopped, for garnish

Instructions:

  1. Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the chopped onions and cook until they are softened and starting to brown.
  2. Add the ginger paste and garlic paste to the pot and cook for a few seconds until fragrant.
  3. Add the ground coriander, ground cumin, ground cardamom, ground cloves, ground cinnamon, ground turmeric, cayenne pepper, and salt to the pot. Mix well and cook for a minute until the spices are fragrant.
  4. Add the cubed lamb or beef to the pot and stir to coat it with the spice mixture. Cook for 5-7 minutes until the meat is browned on all sides.
  5. Add the plain yogurt and 2 cups of water to the pot. Mix well and bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot with a lid, and simmer for 1-2 hours until the meat is tender and the sauce has thickened.
  7. Garnish the Rogan Josh with chopped fresh cilantro and serve hot with rice or Indian bread.
