Here are the instructions to make Chicken Tikka Masala, a popular Indian dish:



Ingredients:

For the Marinade:

  • 1 pound boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt, to taste

For the Sauce:

  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 large tomato, chopped
  • 1/4 cup tomato paste
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 cup heavy cream
  • Salt, to taste
  • Fresh cilantro, chopped, for garnish

Instructions:

  1. In a large bowl, combine the Greek yogurt, ginger paste, garlic paste, ground cumin, ground coriander, turmeric, paprika, cayenne pepper, and salt. Mix well.
  2. Add the chicken pieces to the marinade and stir until each piece is coated. Cover the bowl and refrigerate for at least 30 minutes or up to 24 hours.
  3. Preheat the oven to 400°F. Thread the chicken pieces onto skewers and place them on a baking sheet. Bake for 15-20 minutes or until the chicken is cooked through and slightly charred.
  4. In a large saucepan or Dutch oven, heat the vegetable oil over medium-high heat. Add the chopped onion and cook until it is softened and starting to brown.
  5. Add the ginger paste and garlic paste to the saucepan and cook for a few seconds until fragrant.
  6. Add the chopped tomato, tomato paste, garam masala, ground cumin, ground coriander, turmeric, paprika, cayenne pepper, and salt. Mix well and cook until the tomato breaks down and the spices are fragrant.
  7. Add the baked chicken to the saucepan and stir to coat it with the sauce.
  8. Pour in the heavy cream and stir until the sauce is smooth and creamy. Cook for a few minutes until the sauce is heated through.
  9. Garnish the Chicken Tikka Masala with chopped fresh cilantro and serve hot with rice or Indian bread.
