Here's a recipe for Chole Bhature:
Ingredients:
For the Chole:
- 2 cups of chickpeas, soaked overnight
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 teaspoon of ginger paste
- 1 teaspoon of garlic paste
- 1 teaspoon of cumin powder
- 1 teaspoon of coriander powder
- 1 teaspoon of garam masala powder
- 1/2 teaspoon of turmeric powder
- 1/2 teaspoon of red chili powder
- Salt, to taste
- 2 tablespoons of oil
- 2-3 cups of water
For the Bhature:
- 2 cups of all-purpose flour
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 tablespoon of oil
- 1/2 cup of plain yogurt
- Oil, for frying
Instructions:
For the Chole:
- In a pressure cooker or large pot, heat the oil on medium-high heat. Add the chopped onions and sauté until they are translucent.
- Add the ginger and garlic paste and sauté for a minute.
- Add the chopped tomatoes and cook until they are soft and mushy.
- Add all the spices (cumin powder, coriander powder, garam masala powder, turmeric powder, red chili powder) and salt. Mix well.
- Drain the soaked chickpeas and add them to the pot. Stir until the chickpeas are well coated with the spice mixture.
- Add 2-3 cups of water and mix well. If using a pressure cooker, close the lid and cook for 4-5 whistles or until the chickpeas are soft and fully cooked. If using a pot, cover with a lid and cook on medium heat for 30-40 minutes, or until the chickpeas are fully cooked.
- Once the chickpeas are cooked, garnish with chopped coriander leaves and serve hot with bhature.
For the Bhature:
- In a large mixing bowl, sift the flour, baking powder, baking soda, and salt.
- Add the oil and mix until the flour mixture resembles coarse crumbs.
- Add the yogurt and mix well to form a soft and smooth dough.
- Knead the dough for 5-10 minutes until it becomes soft and elastic. Cover with a damp cloth and let it rest for at least 30 minutes.
- After 30 minutes, divide the dough into small balls and roll them out into circles about 6-7 inches in diameter.
- Heat oil in a deep frying pan on medium heat. Once the oil is hot, gently slide the rolled-out bhature into the oil. Fry for about 1-2 minutes on each side, or until they are golden brown and puffed up.
- Remove the bhature from the oil with a slotted spoon and drain the excess oil on a paper towel.
- Serve the hot and crispy bhature with the flavorful chole for a delicious and satisfying meal.
