Here are the instructions for making Malai Kofta:
Ingredients:
For the Koftas:
- 200 grams paneer (grated)
- 2 large potatoes (boiled and mashed)
- 1/4 cup all-purpose flour (maida)
- Salt to taste
- 1/2 teaspoon red chili powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- Oil for deep frying
For the Gravy:
- 2 large onions (finely chopped)
- 2 large tomatoes (finely chopped)
- 1 tablespoon ginger-garlic paste
- 1/2 cup fresh cream
- 1/4 cup cashews (soaked in water for 30 minutes and ground into a paste)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon garam masala powder
- 1 tablespoon butter
- Salt to taste
- Coriander leaves (finely chopped for garnishing)
Instructions:
- In a mixing bowl, combine grated paneer, mashed potatoes, all-purpose flour, salt, red chili powder, cumin powder, and coriander powder. Mix well and knead the mixture until it is smooth and soft.
- Divide the mixture into small equal portions and shape them into round koftas (dumplings). Set aside.
- Heat oil in a deep frying pan on medium heat. Once the oil is hot, add the koftas in batches and fry them until they are golden brown and crisp. Remove them from the oil using a slotted spoon and place them on a plate lined with kitchen paper to absorb excess oil.
- In a separate pan, heat butter and add chopped onions. Saute the onions until they are translucent.
- Add ginger-garlic paste and saute for another minute until the raw smell of the paste disappears.
- Add chopped tomatoes and cook them until they are soft and mushy.
- Add turmeric powder, red chili powder, cumin powder, coriander powder, and garam masala powder. Mix well and cook for 2-3 minutes until the spices are cooked.
- Add cashew paste and fresh cream. Mix well and cook for another 2-3 minutes until the gravy is thick and creamy.
- Add salt to taste and mix well.
- Add the fried koftas to the gravy and cook for 2-3 minutes until the koftas are heated through.
- Garnish with finely chopped coriander leaves and serve hot with rice, naan, or roti.
