  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 green chili pepper, finely chopped (optional)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder

  • 1/4 cup chopped cilantro leaves
  • 2 tablespoons oil
  • Salt, to taste

Instructions:

  1. Heat oil in a pan over medium heat. Add the cumin seeds and fry for a few seconds until they start to splutter.
  2. Add the chopped onions and green chili pepper (if using), and sauté until the onions turn translucent.
  3. Add the minced garlic and ginger, and sauté for another 1-2 minutes until the raw smell goes away.
  4. Add the chopped tomatoes, salt, and all the spices (coriander powder, turmeric powder, and garam masala). Stir well and cook for 5-7 minutes until the tomatoes have softened and the mixture has thickened.
