Here are the instructions to make Chana Masala, a popular vegetarian dish from India:
Ingredients:
- 2 cups chickpeas (cooked or canned)
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon ginger, minced
- 1 green chili pepper, finely chopped (optional)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon amchur (dried mango powder) or 1 tablespoon lemon juice
- 1/4 cup chopped cilantro leaves
- 2 tablespoons oil
- Salt, to taste
Instructions:
- Heat oil in a pan over medium heat. Add the cumin seeds and fry for a few seconds until they start to splutter.
- Add the chopped onions and green chili pepper (if using), and sauté until the onions turn translucent.
- Add the minced garlic and ginger, and sauté for another 1-2 minutes until the raw smell goes away.
- Add the chopped tomatoes, salt, and all the spices (coriander powder, turmeric powder, and garam masala). Stir well and cook for 5-7 minutes until the tomatoes have softened and the mixture has thickened.
- Add the cooked chickpeas along with 1/2 cup of water. Mix well and let it simmer for another 10-12 minutes until the chickpeas are coated with the spice mixture and the gravy has thickened to your desired consistency.
- Add the amchur or lemon juice and stir well.
- Turn off the heat and garnish with chopped cilantro leaves.
- Serve hot with rice, naan, or any Indian bread of your choice.
